Several years ago I was taking a Christmas vacation in San Miguel de Allende, Mexico and mentioned to the Hotel Owner that she didn't cook 'Mexican Food'. To which she replied, "Skip if I cook it, in MY kitchen it's Mexican Food." THAT is the attitude here in Ajijic. There are tons of great restaurants, just darn few Mexican FOOD Restaurants.
