Back in Marsh Harbor

Update: due to weather and possible storms, I opted to return to Marsh Harbor yesterday instead of Great Guana Cay.  

So, darn it, I missed the World Famous Pig Roast at Nippers.  Oh well, another day....    It just was not worth the possible trouble of anchor dragging onto rocks with the storms blowing through yesterday.  Now we have a Norther, another norther, to move across all this week bringing winds and rain.  So I'll be on the lookout for my next weather window to move to Treasure Cay and check it out.

In two weeks I'll have some friends coming to visit Treasure and I'm pumped to see them.  (*more on that later)

TODAY;  I unloaded the bike and got 3 loads of laundry done this morning.  I had steamed Conch for lunch and then made a quick bike ride to the grocery for a few things.  ($67.)

This lunch was World Class.  Steamed Conch, Peas & Rice, Plantains.  (note the potatoes cooked with the Conch.  Because you cant have too many starches when napping.)  After eating every savory bite I went back to the kitchen and met Deborah for her recipe.  


2 notes:  #1.) I forgot the ladies name at the restaurant, but the place was the Golden Grouper.  #2.) The lady named Deborah was 'a lady chef' I met at the grocery who also gave me her secret recipe and helped me find the cans of Pigeon Peas.  

Peas & Rice.  There are always two things on every menu here.  Mac & Cheese, and Peas & Rice.  (in Mexico and centeral america it's rice and beans, or beans and rice.)  In the Bahamas it's all about the Peas & Rice.  here is the recipe i was given:  'take some tomato paste, bacon or ham hock, onion and spice.  cook it down till the onions are caramelized, then throw in your peas and add water and rice.  turn down the heat and simmer till the rice is done.'  (that's their recipe given, twice, by two different cooks.) 

Finally - a monster nap!
